In our grandparent's time, cooking from scratch was the norm. People the didn't have aisles and aisles of frozen, ready to eat meals, nor the extensive selection of deli items we enjoy today. As more and more women entered the workforce, with full time jobs, families began to rely on the ready to eat and take out options in order to put food on the table quickly. Busy schedules don't allow for lengthy preparations of food, as was the case in the past.
